Aha! The secret is out. We have eaten the "Westerns" for years, but we
always called them "Denver Omelettes", and apparently the "Toasted" part comes
from actually putting the omelette ON the toast instead of serving WITH the
toast. I
think the ingredients are pretty flexible and are the basis for most breakfast
omelettes. in fact the Salvation Army here serves a variation of it in their
canteens...instead of serving with toast you add Bisquick right into the
mixture and cook it all at once so it has its own bread-like shell when it
comes out of the oven. They take their canteens out to low-income areas and
hand out free breakfasts to people on the street, and these are ideal since
they are like sandwiches and don't require a lot of china and tableware.
However you make them, they are delicious and filling and really hit the spot
on chilly mornings.
