Instructions
Place the eggs in boiling water.
New laid eggs require 3 ½ minutes to be lightly cooked.
New laid eggs require 4 to 5 minutes to be moderately soft.
New laid eggs require 10 minutes to be hard-boiled.
Less time is required for eggs not so fresh. Salt added to the water helps to prevent the egg from coming out if shell is cracked.
From my mother's old New Zealand cookery book (1956 edition), printed by a maker of baking powder, custard powder, cornflour and jelly crystals.
