Vanilla Cupcakes

125 grams butter
3/4 cup white sugar
3 eggs
1 teaspoon vanilla extract
1/3 cup milk

Vanilla icing
2 cups icing sugar
25 grams butter, softened
1 teaspoon vanilla extract
22 crystallised violets (optional)

1.	Preheat oven to 180 degrees Celsius. Beat butter and sugar until pale
and creamy. Add eggs one at a time, beating well after each addition.
2.	Mix in the vanilla, then fold through sifted flour and baking powder.
Gently mix in the milk.
3.	Place spoonfuls of mixture into regular-size cupcake cases, then bake
for 15 to 20 minutes until golden and firm to the touch. Allow cupcakes to
cool.
4.	To make vanilla icing, mix together icing (confectioners) sugar, butter
and vanilla until smooth. Ice cakes and decorate with optional
crystallised violets.

Makes 22

Tip:
Make your own crystallised violets by brushing clean, dry, fresh flowers
with lightly whisked egg white and coating in castor sugar. Dry in a
single layer in a warm spot such as a hot-water (airing) cupboard.
