Unless vegetables are cooked carefully, much of their food-values are
lost.
Throwing away the cooking water wastes valuable mineral salts and
vitamins.
Use as little water as possible and always put a lid on the saucepan.
Use vegetable water to make soups, stock, gravy and sauces.
Use the vegetables as fresh as possible.
Wash the vegetables thoroughly, and avoid soaking where possible."
