Hello Ian and Warren and all "Hash Brown" fans ...everywhere !!!!

 My version of "hash browns" comes from really what conditions were
like in many places, and in Scotland we were not better off.

 As a wonderful lady of Florence ITALY told me, of the PIZZA it was
a collection of left overs baked into a bread with lots of tomatoes
etc,  and I loved her REAL Pizza, as all was baked into a wonderful
crust, thus also is the idea of "hash browns" as my mother and others
would have their metered gas for a penny for so long, and in that
period they cooked extra potatoes and other things, I remember.

 The "hash brown" was that cold broiled pototo, a leftover maybe
the stew or whatever, thus in the morning, she would mash it up
and make a full skillet of browned toasted potatoe, which I have
never seen in a restaurant....period.    If we didn't do a hash brown
and I think Ian, touched on it, she would mix it with something
leftover, such as fish to make "fish cakes".

 Unlike today.   Our food was never wasted, and even potatoe skins
never saw the waste bin or composter.  I have noted, the waste
of food today in this country,  and I have heard people say it,
but well "the public" has never caught on.

 We are lucky to have garbage monthly.    Our garbage is usually
metal cans and plastic bottles and wrapping, and anything else
as food or peelings ends in the composter.

 "YS" does not have a garbage trail to follow.....either.

  Oh yes...sorry this is about "hash browns" and my favourite potatoe
group for this is what they call here "Yellow Flesh", along with
others too, as it is an interesting group .
