Peanut Shortcake

Ingredients

4 oz (100g) butter 
1 Cup (100g or 4oz) white Sugar
2 Egg Yolks
2 Cups (8 oz) plain Flour
1 Teaspoon Baking powder

Instructions

Cream the butter and Sugar, add egg yolks. Add sifted flour and baking
powder. Roll out about 1/2 inch (13 mm) thick and place on a greased tray,
spread with the topping mixture.

Topping
6 ounces (150 grams) Roasted Peanuts
1 scant teacup sugar
3 ounces (75 grams) Dark Chocolate
2 Egg Whites (unbeaten)

Melt chocolate in a saucepan and add remainder of ingredients. Stir until
mixture boils then spread over shortcake. Bake for 30 minutes at 190
degrees Celsius or 375 degrees Fahrenheit. Cut while hot.
