I like that recipe,Michael.
Among the things my father did was mushroom growing so I ate them cooked
in many ways.
One of the things I DETEST about TV cookery programs is when the so called
'chef' smothers the mushrooms with sauces, spices and herbs until the
taste of the muchrooms is totally lost.
I was once on a French ferry where the meal included excellent, button
mushrooms. I sent my regards to the chef and asked him what he had done.
Back came the reply "They are Chesswood, Mseur,from tje tin, just dropped
in boiling water for two minutes" Chesswood was a once popular brand of
tinned, button mushrooms which I had never bought before. It goes to show
that something can be excellent without messing around.
"Mushrooms
(Stewed)
Peel mushrooms, put into saucepan and barely cover with milk. Add pepper
and salt, and bring to the boil. Simmer gently for a few minutes, add a
small piece of butter, and thicken with a little flour mixed to a smooth
paste with cold water. Simmer for 5 minutes. Do not boil hard."
Sounds very nice, I'll have to give it a try.
