"Mysterious Pudding

Ingredients

2 ounces (50 grams) Butter
2 ounces (50 grams) Sugar
1 tablespoon Grated Lemon or Orange Rind
2 Eggs
4 ounces (100 grams) Plain Flour
1 Teaspoon Baking powder
1 Tablespoon Marmalade or Jam

Instructions

Grease a basin and put jam in the bottom. Cream butter and sugar, add rind
and egg yolks, beat well. Then fold in stiffly beaten egg whites. Sift and
fold in flour and baking powder. Steam 1 hour and 30 minutes. Serve with
jam or custard."

From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
