I have never really taken notice of this topic before but it reminded me
of a couple of experiences which I thought might interest someone.
First, I was in France, driving up from the south along the Autoroute du
Soleil and stopped off at a motorway services for a rest in the
restaurant.
I had with me my wife, her sister, mother and auntie,
The antie wanted some French Fries or 'Chips' as we Brits call them so she
asked me what the french was for chips, "Pommes Frites" I replied.
She went over to the counter where an imposing cook in a tall chef's hat
was standing. "Pommes frites", she demanded. "Oui Madame" ,replied the
chef without turning a hair. Within minutes she was back with a very large
plate full of excellent chips. It is worth mentioning that this was in the
early hours of the morning and the restaurant was almost empty so he
probably wasn't busy.
We all tried a couple and, it is true, despite a lot of people I have met
saying the hate the French, the really can cook !
Second tale. I had gone to dinner with the family of my best friend at the
time, a Hindu Gynaecologist. My wife, like her auntie, distrusted all the
foreign dishes but was prepared to eat chips.
The lady of the house disappeared for quite some time while I carried on
eating the Hindu dishes with spices which I really liked.
Eventually she returned with a bowl of chips which my wife declared were
the best she had ever tasted.
I asked the Memsahib what her recipe was and it is worth repeating;
First you cut the chips very thin, about half the thicknes of the average
British chip. Then you cover the chips with rock salt and stand for half
an hour, shake off the loose salt and fry normally.
My wife was so impressed that she took to cooking chips herself that way
at home. The big problem was getting the rock salt. Plain cooking salt
will not do.
If anyone wants to try this, I reccomend it, just make sure you can get
the rock salt.
