Banana Cake Recipe
Typed by ZL1ABS (from my mother's old, handwritten
recipe book)

Ingredients

4 ounces (100 grams) butter
2 cups (8 ounces) flour
2 eggs
2 mashed bananas
2 tablespoons milk
1 1/2 cup (6 ounces) sugar
1 level teaspoon baking soda
1 teaspoon baking powder

Instructions

Cream butter and sugar, add eggs, mashed bananas then add milk with baking
soda dissolved. (Prepare this in a separate saucepan while the butter &
sugar are creaming).
Lastly add flour & baking powder.
Pour mixture into a greased cake baking tin, lined with parchment paper.
Oven bake for approximately 25 minutes at 350 degrees Fahrenheit (180
degrees Celsius). Test with a baking pin when done to make sure nothing
sticks to the pin
(which would indicate the need to cook for a little longer time, until the
pin tests clean).

Allow the cake to cool down on a rack. Melt one teaspoon of butter with a
teaspoon of boiling water. Stir in one cup of icing sugar (confectioners
sugar) with the juice of one lemon. Add just enough boiling water to make
the icing (frosting)
able to be spread over the cake with a flat knife.
