Easy Beater Cake

Recipe from my mother [Beverly Sheffield].
Originally clipped in a women's magazine 30 years ago or more.

Ingredients

2 Cups Flour
2 Teaspoons (5 ml) Baking powder
1 Cup white Sugar
4 oz (100g) butter
1 1/4 Cup Milk
2 Eggs
2 Teaspoons baking Cocoa (optional for chocolate colour/flavoured rather
than the plain yellow cake version)
2 Teaspoons ginger powder (optional for a ginger flavour)

Instructions

Cream butter and Sugar (I put both in a mixing bowl with another plastic
bowl underneath containing boiling water from a kettle, to slowly heat
the butter & allow the sugar to be stirred in), add beaten Eggs.
Add Flour and baking powder, plus optional dry ingredients.
Mix well (use large spoon) then pour in Milk.
Grease cake-baking tin (or line with parchment paper) and pour mixture in.
Bake for 45 minutes at 170 degrees Celsius or 375 degrees Fahrenheit.
Test with a cooking pin to ensure the centre is cooked.

Icing sugar or frosting maybe applied after the cake is cooled.

Variations

Use 1 Cup rolled Oats and 1 Cup flour instead of 2 Cups of flour.
This gives a more "Oaty" textured cake.
The juice of several Lemons may replace some of the milk to give a nice
lemon flavour to the cake.
Cinnamon powder may be used if desired, as may chopped apple pieces.
Nuts or chopped dried fruit are another optional variation.
