Carrot Marmalade

Ingredients
4 large carrots
5 lemons
5 pounds Sugar
11 breakfast cups water
Instructions
Grate carrots on a coarse grater. Slice lemons finely. Cover all with
water and leave overnight. Next day, boil for one hour; add sugar and boil
rapidly until it jells - about 10 minutes. "
