Hi Michael.

Your recipe for beetroot took me back a few years to when a Polish friend
of mine made me some Borshch. Despite the boring sound it was delicious !

A few weeks ago I decided to look up Borshch on the net. They seem to
prefer the spelling 'borsch' or 'borscht' on the web. They give a number
of eastern recipes for it. The one I had was probably the Polish one not
the Russian (the Russians don't seem to proud of their beetroot soup or
shchi, the cabbage soup).

Most of them are easy to make. I suppose the taste is an accquired one, a
bit like Marmite or Vegemite :-)

I loved it, especially with sour cream. Sadly, all my old Polish and Czech
friends are dead now.
It is well worth a try. Ordinary pickled beetroot is normally sold as
rather small balls in vinegar but I always make it from raw beetroot
straight from the ground. Sounds like the way your mother used to make it.
