Whilst I have no direct experience with these USB "gizmos", I have heard 
tales from a few people who say they are a bit "rubbish".  Personally, I 
would have used a hi-fi turntable, RIAA pre-amp (or amp system) and fed the 
line level into the "line in" of the PC's sound card.

A quick Google search shows that some of these USB units have "real" 
headshells so at least you can fit a decent cartridge/stylus to them ;)

Audacity is a decent free audio editor - not my personal preference but 
certainly capable of handling basic dubbing duties.
