I can't throw any light on what they were upto with their flight simulator
game but any game designed to be played between TCPIP networked computers
can be played straight away across the amprnet packet network. 
The practicalities would depend on exactly what sort of links were available
between the players and what response times were neccessary for the
particular game. 
I'm only linked to the amprnet via a 19,200 baud 70cm simplex radio link
but simple games such as battleships, connect4, scrabble or chess/draughts
etc. are no problem but I've not looked at anything requiring a faster
response time. Problem would be the transit times for packets across the
amprnet containing shared radio links would be very variable and
unpredictable. But there is no reason why people couldn't set up dedicated
point to point links to experiment, simple cheap wifi bridges on 13cm 
could be a simple way to start experimenting.
