“Baking Powder Breadö
typed by Michael ZL1ABS
Ingredients
4 Breakfast cups Plain Flour
1 Teaspoon Salt
1 Teaspoon Sugar
2 heaped Teaspoons Baking Powder
1 small cold Boiled Potato
Milk or Milk and Water
Instructions
Sift together flour, sugar, salt and baking powder. Rub in grated potato. Add
sufficient liquid (about one pint or 600 ml) to make a soft and smooth dough.
Mix quickly and put at once in a greased tin three quarters full; smooth the
top with a knife dipped in melted butter and bake immediately about 45 minutes
to 1 hour at 400 Fahrenheit (200 degrees Celsius). When cooked take from tin
and wrap in a bread cloth until cold.“
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
