"Saratoga chips
Wash and pare the potatoes and slice very thinly. The slices should be
almost transparent when held up to the light. Place in cold water for 1
hour. Drain thoroughly, dry in a cloth. Fry in deep, smoking hot fat until
crisp and golden brown. Drain well and serve sprinkled with salt."
