Pancakes Recipe

                   Typed by   ZL1ABS (from my mother's old, handwritten
recipe book)

Ingredients

1 egg
3 cups plain flour
1 pint (600ml) regular milk
3 teaspoons baking powder

Instructions

Put the flour in the mixing basin. Add egg, and then stir. Add milk and
mix with electric eggbeater until smooth.  Add the baking powder and mix
with the electric beater on high speed. 
Allow the mixture to rest for two minutes.

Heat a non-stick fry pan so that a teaspoon of butter melts & sizzles.
Spoon five tablespoonfuls of mixture into the fry pan. Swirl around the
pan to evenly coat. 
Cook until the bubbles rise & burst, then flip to cook the underside. Cook
until lightly brown. Small amounts of butter may be added between pancakes
to prevent the pan becoming too dry.
Serve with a squeeze of lemon juice & sprinkling of white sugar. These are
dessert pancakes, but may be made anytime of day.
Alternate fillings are golden syrup, cream, fruit jam or maple syrup.
A savory version with ground beef, curry & vegetables is a possibility.

To serve only two people for dessert divide the quantities by three,
except the egg.
