"Spiced Mince Pancakes with Salsa

Ingredients

2 cups self-raising flour
1 3/4 cups Milk
2 Eggs
60 grams Butter melted
Cooking oil spray
Fresh coriander, to garnish

Spiced Mince

1 Brown Onion, finely chopped
1 clove Garlic, crushed
1 tablespoon olive oil
500 grams Beef Mince
2 teaspoons ground Coriander
2 teaspoons Cajun seasoning
Salt & Pepper to taste
1/2 cup chopped fresh Coriander

Capsicum Salsa

1 Red Capsicum (Bell Pepper), finely chopped
300 millilitres tomato Salsa

Instructions

To make Salsa, combine ingredients in a bowl. Set aside.
To make spiced mince, cook onion and garlic in oil in a pan until soft.
Add mince, ground coriander and seasoning. Cook, stirring, until mince is
cooked through. Remove and season. Stir in fresh coriander. Cover and keep
warm.
To make pancakes, place flour in a bowl. Whisk in combined milk, eggs and
butter until smooth. Heat a non-stick frying pan over medium heat. Spray
with oil. Pour 1/2 cup of batter into pan. When bubbles appear, turn and
cook until golden. Remove and cover. Repeat to make 6 pancakes.
Serve pancakes topped with mince, salsa and fresh coriander.
