Ingredients
1ounce (28 grams) Gelatine
2 Breakfast cups Cold Water
2 Lemons
1/2 breakfast cup Sugar
2 eggs
Instructions
Soften gelatine in cold water; add grated lemon rind and sugar. Boil 2
minutes. Add lemon juice and leave to cool. Fold in stiffly beaten egg
whites. Pile spoonfuls into glass dishes or set in a wet mould. Serve with
custard made from egg yolks."
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
