Jam Tart (Open)
Typed by ZL1ABS
Instructions
Line shallow fireproof plate with flaky or short pastry; prick the bottom
put in jam; roll out some of the jam paste; cut in narrow strips and lay
across the tart. Lay another strip around the edge and trim off outside.
Brush over with yolk of egg. Beaten with a little milk. Place on a cold
tray and bake at 450 degrees Fahrenheit (232 degrees Celsius) for 15 to 20
minutes.
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
