Hello YL @WW readers and all who are interested.
 
This "MANDIOCA SOUP" was made by Maria in our kitchen, and sure
hits the spot after coming in from the cold and snow we've
been having at the lake.
 
WE were requested by friends in the area, to write it down and
give to them, so while I was doing that, I also decided to share
with everyone on packet we know thru the various nets we participate
in.   I hope you enjoy it.

Ingredients:

Chopped fine Garlic
Chopped fine Onions, any type, as well any other veggie.
Cooking Oil
Ground Beef
You may also add salt and pepper as desired.
Chopped into small cubes Mandioca or Yucca after preparing.
Also might add potatoes too..if you want.

To prepare the Mandioca.   First buy in the store and examine
each piece carefully at the ends to see if rotten or soft.
It should be white inside. There are two types "white" and
"yellow" but the rot shows in both of them, so look before
you buy.  Also even if you get home you might find some bad
pieces so throw in the garbage.

OK...clear off the outside brownish bark or skin to the inside
white or ellow flesh.  Chop in mangable chuncks, then keep cutting
and chopping until they are cubes and perhaps mashable later on
in the cooking.   After all that is done you are ready....

Have a pot on the stove medium, where you pour some cooking oil
< We use Cranola Oil > then add the chopped finely garlic and
onions to brown. NOT to burn please....after then we ad the
ground beef to brown up...or until the red meat is no longer
seen.   At that point we add in the chopped Mandioca and mix well
and then add warm water until it covers it all and let cook
for 1hour or more.   The Mandioca Soup is ready when the Mondioca
is soft and mushable as we then MASH it, or you can leave it
solid.   It is ready when it is a smooth creamy look.
