"Cashmere Chutney

Ingredients
2 pounds (900 grams) Green Apples or Gooseberries
2 pounds (32 ounces or 900 grams) Brown sugar
1 pound (16 ounces or 450 grams) Raisins
1 pound (16 ounces or 450 grams) Dates
1/2 ounce (14 grams) Garlic
1/2 ounce (14 grams) Cayenne pepper
4 ounces (115 grams) Whole Ginger chopped and pounded
2 ounces (56 grams) Salt
Vinegar
Instructions
Put apples chopped, but not peeled, and cored into preserving pan. Cover
with vinegar. Cook until soft, and then add remainder of ingredients. Boil
for 30 minutes. Put into bottles, cover, and keep twelve months before
using."
