Apple Cheese Tarts

Ingredients
7 ounces (200 grams) Short Pastry (see recipe already sent)
14 ounces (400 grams) Apples (weighed after peeling & coring)
Rind and juice of one Lemon
1 ounce (28 grams) Butter
2 ounces (50 grams) sugar
2 Eggs
Instructions
Line some patty tins with pastry; prick well and cook at 400 degrees
Fahrenheit (205 degrees Celsius). Cook apples in a very little water. Rub
through a sieve, return to the saucepan, and add lemon rind, juice, sugar,
butter and slightly-beaten eggs. Cook over a low heat until it thickens
slightly. Fill cases and return to oven to set. Sift with icing sugar.

maker of baking powder, custard powder, cornflour and jelly crystals.
