Thin Shortbread Biscuits
Typed by Michael Sheffield
-Makes lots to have over the Christmas holidays for that "little
something" with coffee or tea.
Mix together thoroughly ---- 1 Cup soft butter
1 cup icing sugar
1 teaspoons essence, Vanilla, or rose.
Sift together and stir in -- 2 1/2 cups sifted flour
1/8 teaspoon salt.
Mix thoroughly with hands.
Press ands mould into a long smooth roll about 2 inches (54mm) across.
Wrap in waxed paper and chill until stiff (several hours or overnight).
With thin, sharp knife, cut into thin slices.
Place on a baking sheet and bake until lightly browned, at 400^Fahrenheit
(200^ Celsius) for 8-10 minutes.
