Potato & Mushroom Salad

From a "Fresh Mushrooms" storage bag (paper) from a local fruit &
vegetable shop.

Serves 4
Ingredients:

250 grams new potatoes, washed & halved
125g fresh mushrooms, sliced
1 onion, chopped
1/4cup stuffed green olives, sliced.

Dressing:

½ cup yogurt
2 tablespoons mayonnaise
1 tablespoon chopped parsley
¼ tablespoon dried tarragon
¼ teaspoon mustard powder
Pepper to taste.

Method:
Cook potatoes in boiling water until tender. Drain & cool. Combine
potatoes and remaining ingredients in a large bowl.
To prepare dressing:
Whisk all ingredients together. Blend dressing through potato mixture.
Cover with plastic wrap and refrigerate until required. Serve as a meal
accompaniment.
