RICE  CAKE
 
Ingredients
* 7 oz Rice
* 3 ½ oz sugar
* 1 ¾ oz candied citron
* 1 ¾ oz almonds
* 3 eggs
* 2 cups milk
* 1 ¾ oz butter
* lemon
* salt
* Cherry liqueur
Preparation:
30 minutes preparation + 30 minutes cooking
This is a typical sweet from Bologna. Cook the milk, 2 cups of water, the sugar, 
the grated lemon zest and a little salt.
When it comes to the boil, add the rice and leave to cook until the liquid has been 
absorbed. Add to the cold mixture, eggs, butter, candied fruit and almonds.
Bake in a hot oven (400° C) for half an hour. Cut the (Madeleine) cake brushed with Cherry 
liqueur into rhomboids.
Serve warm.
