Pappa al pomodoro -Tomato soup-
Ingredients for 4 people:
2 lbs ( 0,9 Kg ) of Tuscan bread (or plots) stale bread, 1 onion, 1 carrot, 1
stalk
celery, 22 onces ( 0,62 Kg) of diced tomatoes, 1 bay leaf, 10 fresh basil
leaves,
4 tablespoons Tuscan pecorino cheese, salt .
Preparation:
Chop onion, carrot and celery. Heat a large saucepan 4 tablespoons oil and
sauté the chopped vegetables. Add the bread cut into small pieces and fry for a
few minutes.
Pour the tomatoes, a pinch of salt, bay leaf and basil.
Stir and cook over low heat for about half an hour.
Divide the soup into bowls, sprinkle with grated cheese, sprinkle each plate
with
a tablespoon of olive oil. To serve, according to taste and season, hot or
lukewarm.
It 'an old Tuscan recipe, easy to do.
