Ingredients
3 Eggs
6 ounces (170 grams) Sugar
Pinch of Salt
4 ounces (110 grams) plain flour
1 Teaspoon Baking powder
2 ounces (50 grams) Butter
2 Tablespoons Boiling Water
Instructions
Beat eggs a little with a pinch of salt, add sugar and beat until thick.
Fold in sifted flour and baking powder lightly. Lastly, add butter melted
in boiling water. Bake 25 to 30 minutes at 375 degrees Fahrenheit (190
degrees Celsius).
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
