"Eccles Cakes

Ingredients
2 ounces (50 grams) Butter
4 ounces (100 grams) Brown Sugar
2 ounces (50 grams) Candied Peel
8 ounces (200 grams) Currants
1 teaspoon Cinnamon
A little Grated Nutmeg
8 ounces (200 grams) Flaky Pastry
Instructions
Cream the butter and sugar, stir in the other ingredients. Roll pastry out
thinly and cut into rounds 4 inches (10 centimetres) in diameter. Put a
little of the mixture on the centre of each, wet the edges and pinch
together to form a ball. Turn over and flatten until the currants show
through. Mark the tops, sprinkle with sugar, and bake at 450 Fahrenheit
(230 degrees Celsius)."
