"Cottage Cheese Brekkie Pancakes

Ingredients

250 grams Cottage Cheese
1/2 cup self-raising flour
1/4 cup Milk
2 Eggs separated
1 Tablespoon finely chopped fresh Chives
Salt & Pepper to taste
Cooking oil spray
Extra Chives, to garnish
Extra Cottage Cheese and Tomato and Capsicum Chutney, to serve 

Bacon Spinach topping

8 Bacon Rashers, chopped
200 grams Baby Spinach leaves
2 Roma Tomatoes, quartered
1/3 cup Tomato and Capsicum Chutney

Instructions

To make pancakes, combine cheese, egg yolks and milk in a bowl. Add flour
and chives. Mix. Season with salt & pepper. Beat egg whites with electric
mixer until firm peaks form. Fold into cheese mixture. Heat a large
non-stick frying pan over medium heat. Spray with cooking oil. Pour 1/2
cup of batter into pan. When bubbles appear, turn and cook until lightly
brown. Remove and cover to keep warm. Repeat to make 4 pancakes. To make
bacon spinach, spray a heated frying pan with oil. Add bacon. Cook until
lightly browned. Transfer to a large bowl. Add spinach, tomatoes and
chutney to hot bacon. Toss to combine.
Serve pancakes topped with bacon spinach topping, extra cheese and
chutney. Garnish with chives.
