"Apricot or Banana Marshmallow

Ingredients
2 Teaspoons Gelatine
1/2 Cup Boiling water
2 Egg whites
3 Tablespoons sugar
4 Heaped tablespoons mashed Apricots or Bananas
Fruit or Jelly to serve
Instructions
Dissolve gelatine in boiling water. While still hot, pour in egg whites
stiffly beaten, and beat until it resembles whipped cream. Then add sugar
and mashed Apricots or Bananas. Beat for a few minutes. Serve with fruit
or jelly."
From my mother's old New Zealand cookery book (1956 edition), printed by a
maker of baking powder, custard powder, cornflour and jelly crystals.
