Pancakes as made by the XYL:
Ingredients:
Half pint of milk
1 egg.
4oz plain flour.
Half teaspoon of salt.
Lemon Juice.
Sugar.
Method:
Sieve the flour and salt into a bowl, make a well and add half the milk
and the egg. Beat using a hand whip or mixer until the flour is well
incorporated, add the rest of the milk and continue beating until the
surface is well covered with air bubbles.
Cooking:
Don't burn the house down!
Add a little of the mixture to a hot greased pan, tilting to allow the
batter to run thinly over the surface, covering the bottom of the pan.
When top is set and bubbling, turn over or toss (if you dare!), and cook
on the other side until done.
Eating:
Sprinkle with sugar and lemon Juice, eat while hot.
Serves 4.
