Make contacts with minimal setup, easy signal acusition, reliable transport.
PSK31 offers quick turnaround, narrow band (smaller than CW), ease of operation
and reliability.

Sure, they're not as easy to use, take more CPU (have you tried implementing
it in a little uC?), take a long time to 'turn around' the conversation and
take much more bandwidth.
For passing large messages, a longer turn around can be tolerated, but for
quick live keyboard to keyboard conversation, they are not as useful.
All of these modes are fine modes, but no one will be a panacea. Reality
doesn't tend to work that way. :)
