ANZAC Biscuits

Ingredients

1 1/2 Cup  (6oz) plain Flour
3/4 Cup (75g or 3oz) white Sugar
2 oz (50g) butter
1 teacup coconut
1 teacup Rolled Oats
1 tablespoon Golden Syrup
½ teaspoon baking Soda
2 tablespoons Boiling Water

Instructions

Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup. Dissolve soda in the boiling water and add to butter and golden syrup. Make a well in the centre of flour, stir in the liquid. Place in spoonfuls on cold greased trays. Bake 15 to 20 minutes at 350 degrees Fahrenheit or 170 degrees Celsius.

ANZAC stands for Australia New Zealand Army Corps. ANZAC was created to battle for the British Empire in WW1 (1914-1918). ANZAC forces saw action at Gallipoli in Turkey and the Western Front of Europe. Each April 25th ANZAC Day is celebrated in Australia and New Zealand to remember the men & women who served in times of war. Commemorative marches, speeches, wreath laying ceremonies and flag raisings are held.  It is a Public holiday. ANZAC biscuits are said to be typical of the basic cooking that soldiers could do with basic ingredients.  The Returned Services Association has an annual fundraising day before ANZAC day, selling red “Flandersö poppies to aid the welfare of ex-servicemen and women
