"Raspberry mini Pancakes

Ingredients

1 cup self-raising flour
1/2 cup Milk
2 Eggs, separated
85 gram packet raspberry jelly crystals
Cooking oil spray

Orange raspberry Salsa

1 cup frozen raspberries
1 tablespoon icing sugar
2 oranges, segmented

Instructions

To make orange raspberry salsa, combine frozen berries and icing sugar in
a medium bowl. Stir in orange segments.
To make mini pancakes, whisk milk, egg yolks and half the jelly crystals
in a large bowl.
To make pancakes, place flour in a bowl. Gradually whisk in flour until
mixture forms a smooth, thick batter. 
Beat egg whites with an electric mixer until soft peaks form. Add
remaining crystals. Beat for a further 2 minutes, or until crystals are
dissolved. Fold egg white mixture into batter, in 2 batches.
Heat a large non-stick frying pan over medium heat. Spray with cooking
oil. Spoon 1 tablespoon of batter into pan and repeat to make 5 mini
pancakes. When bubbles appear, turn and cook until golden. Remove and
cover to keep warm. Repeat to make 20 pancakes.
Serve warm mini pancakes with orange raspberry salsa."
