Pikelets Recipe

                   Typed by   ZL1ABS (from my mother's old, handwritten
recipe book)

Ingredients

1 egg
1 1/2 cups plain flour
1 1/2 cup regular milk
1 1/2 teaspoons baking powder
2 tablespoons sugar
1 tablespoon butter
1 tablespoon hot water

Instructions

Beat sugar and egg until light and frothy with electric eggbeater. Add
milk, flour, melted butter and hot water. Beat all ingredients together.
Add baking powder and beat for one minute with electric eggbeater on high
speed. 
Allow the mixture to rest for two minutes.

Heat a non-stick fry pan and lightly grease with aerosol oil spray or a
trace of butter. Spoon a tablespoonful of mixture into the fry pan.  As
the Pikelets are small more than one may be cooked at the same time, if
the fry pan is big enough.
Cook until the bubbles rise & burst, then flip to cook the underside. Cook
until lightly brown.

Topping possibilities are butter, golden syrup, cream, fruit jam or maple
syrup.
Savoury options would be Salmon, luncheon ham, avocado or goat's cheese.
