"Corn bread

Adapted from a recipe on the box of fine ground cornmeal.
Ingredients
1 Cup fine ground cornmeal
1/2 Teaspoon salt
2 Teaspoons baking powder
2 Eggs
1/4 cup olive or canola oil
1 Cup whole kernel corn (drain off liquid if canned) or frozen mixed
vegetables
1 small (150 grams of any flavour) yogurt pottle (or ½ cup sour cream)
1/4 Cup diced capsicum
2 Cups grated tasty cheese (optional)
Instructions
Heat the oven to 190 degrees Celsius or 375 degrees Fahrenheit.
Place the dry ingredients in a mixing bowl.
Mix wet ingredients oil, eggs and yoghurt together until smooth in a
separate mixing bowl. Pour wet ingredients in the dry ingredients with
corn or mixed frozen vegetables, capsicum and 1 - 1/2 cups of the optional
grated cheese.
Fold in gently until just mixed together. Pour into a lined tin or quiche
dish.
Sprinkle with 1/2 Cup of grated cheese (optional).
Bake for 30 minutes or until the baking pin tester comes out clean."
