Coconut Bread

Ingredients

1 1/2 cups plain flour
1 teaspoon baking powder 
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup caster sgar
1/2 cup grape-seed oil
2 eggs, lightly beaten
1/2 cup buttermilk
1/2 cup desiccated coconut

Instructions

Preheat the oven to 180 degrees Celsius (360 degrees Fahrenheit). Lightly
grease and line a loaf tin (with baking paper). In a bowl stir together
the flour, baking powder, baking soda and salt. In a second bowl, whisk
together the sugar, oil and buttermilk. Using a large bowl, alternately
mix together the wet and dry mixes then fold through the coconut. Bake for
approximately 40 minutes or until an inserted skewer is removed clean.
