CONFETTI CREAM CAKE (DIABETIC)

* 1 each diabetic orange, lime & strawberry jellies
* 90gms walnuts
* 1 cup boiling water
* 1 packet diabetic lemon jelly crystals
* 250 gms cream cheese - room temperature
* 2 tsp liquid artificial sweetener
* 1 1/4 cups thickened cream
* whipped cream and lemon rind for decorating

Prepare orange, lime and strawberry jellies.  Chop the walnuts until very
fine.Sprinkle onto the bottom of a 23cm (9") springform pan.  Dissolve the
lemon jelly crystals in the boiling water.  Chill until set.

In a large bowl, beat the cream cheese until smooth.  Add sweetener and
partially set jelly.  Beat until light and fluffy.  Whip the cream until
doubled in volume, fold into the cream cheese mixture.

Cut the prepared jellies into small cubes.  Using a spatula gently stir into
the cream mixture and pour into the springform pan.  Chill until set.

Before serving, remove the sides from the pan.  Pile the extra whipped cream
in the centre and top with twists of lemon rind.

Serves 10.
