I've messed around with Meshtastic and I wonder what kind of backlog you'd get with the chat application.  I suspect, knowing how slowly the mesh connection is, you'd end up with lots of pending messages that need to be sent over LORA.  That said, I'd be interested in seeing any results you come up with if you do mock up something.
