Verse 1.
Holden Australian Vehicle. Made by General Motors Holden.
Ute Utility vehicle. (Like a small pickup truck)
Esky Make of ice box for keeping drinks cool. Now a generic term to
mean almost any brand of ice box.
Kelpie Highly regarded breed of sheep dog.
Thongs Flat piece of footwear in shape of sole with just a "thong" that
passes between big toe and the next toe to keep them on. Also sometimes
called flip-flops due to their peculiar action when walking.
Verse 2.
Swaggy Itinerant traveller. Tramp. Hobo. Carries his swag, (Swagman)
bundle or shiralee.
Verse 3.
Snap Photograph.
Shoot through Go or leave, fairly rapidly. Usually (often) to get out of
doing work.

ADDITIONAL COMMENT.
The first verse, third line reads,
"Kelpie by my side, singing Christmas songs"
My understanding is that this indicates that the person involved (Namely,
the singer) is singing Christmas songs, and NOT that the dog (one of the
"Kelpie" breed) is singing Christmas songs.
HOWEVER! DO NOT be surprised if you actually do discover that it was the
dog singing after all.
We born "Australians" are really quite clever at times, and so are our
Kelpie dogs.
